My boyfriend is originally from Spain, and he is also a wonderful cook, so when the Summer comes, I beg for him to make me his Gazpacho.
Gazpacho is a refreshingly cool Spanish soup and the first time I tried it, I was hooked! My boyfriend’s family typically eat gazpacho in the morning and call it their ‘rocket fuel’ – and it certainly is nutritious fuel for your body!
Gazpacho is high in antioxidants and is wonderful for your blood pressure, eye health, protection against cancers (such as prostate cancer) and has anti-inflammatory and anti-aging properties!
Just thinking about it now makes me want some! It’s fantastic in the morning and also delicious and fun for dinner on a warm evening with your choice of toppings.
Ingredients (serves 2)
- 2 capsicum (red or green)
- 2 large cucumbers
- 8 tomatoes
- 1 clove garlic
- 1 1/4 cups water
- 1/2 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1/2 heaped tsp salt
- pepper to taste
- Finely chopped: red/green capsicum, red onion, apple
- Crispy pancetta (they use jamon in Spain but pancetta works well!)
- Boiled egg
